NUTRITIONAL PROPERTIES OF MAIZE

Corn or maize is the common name for the cereal grass (Zea mays) widely grown for food and livestock fodder. Apart from its beta-carotene and fibre content, we can also get other health-supportive antioxidant benefits from all varieties of corn (maize). Corn contains phytonutrients
such as carotenoids, high concentrations of lutein and zeaxanthin, anthocyanins, protocatechuic acid, etc. All of these nutrients have strong antioxidant activities in the body when eaten — boiled or roasted. In addition to the antioxidant properties in maize it's high fiber content help in proper digestion and detoxification. The carotenoids in maize also help to enhance good vision.
